Russia (bbabo.net), - Scientists of the Astrakhan State Technical University have patented an exotic product - cakes and pastries using fish scales from the Volga-Caspian basin: crucian carp, bream, silver carp. The desserts are sweet, low-calorie and do not smell like fish.

- They don’t smell, because the technology is as follows: we process the scales in a special way, isolate high-molecular collagen and deodorize it, we get high-quality gelatin - a structure-forming agent for desserts, - said Olesya Yakubova, Associate Professor of the ASTU Department.

University scientists have found that when solidified, fish gelatin turns into a glossy icing that can be used to cover cakes. And if you beat such gelatin, you get sambuco or mousse, and dietary, since it does not contain sugar and animal fats.
